
WHAT YOU NEED
– 1 x 400g can of cannellini beans
– 300g chopped bacon
– 1 chopped onion
– 2 tbsp minced garlic
– 1x 400g can diced tomatoes
– 1/2 cup white vinegar (make sure it’s gluten free)
– 1/2 cup gluten free bbq sauce
– 2 tbsp gluten free Dijon mustard
– 1 tsp Smoked Paprika
– 1 tsp dried chilli flakes
– 3 dried bay leaves. (Remove these when you serve the beans or if you leave them in, don’t eat them).
-2 tbsp of oil for frying
– (Optional) 1 tsp white sugar
HOW TO MAKE THE BAKED BEANS
1) Heat the oil in a pan. Once it’s warm, turn it down to a medium heat.
2) Add onions and bacon and start to cook them. Stir occasionally so they don’t burn. After a few minutes you will see the onions will start to turn translucent.
3) Add the garlic and cook until the bacon is cooked. Keep an eye on those onions, we don’t want them to burn.
4) In a seperate pot add the tomatoes, then transfer the onions, bacon and garlic into this pot too.
5) Add remaining ingredients and cook on medium heat for 20-25 minutes. You can always turn the head down if you need to. Stir occasionally to stop the beans catching on the bottom.
6) They are ready to serve. I like to serve them with gluten free bread and butter.
