
WHAT YOU NEED
FOR THE SALAD;
⁃ 1 tomato, diced
⁃ 1/2 red onion, finely diced
⁃ 1 jalapeño, seeds removed and finely diced
⁃ 1x400g can of black beans, rinsed and drained
⁃ 1x400g can of corn, rinsed and drained
FOR THE DRESSING;
⁃ 1/4 cup chopped coriander
⁃ 1 tsp chili powder
⁃ 1/4 cup olive oil
⁃ Juice of 1 lime (microwave it for 5-10 seconds to get more juice out of it)
⁃ 1 tsp cumin
⁃ 2 tsp of honey
⁃ Salt and pepper
HOW TO ASSEMBLE
1) In a bowl put in the tomato, red onion, jalapeño, black beans and corn.
2) In a separate bowl, mix all dressing ingredients together.
3) Pour the dressing over the top of the tomato, red onion, jalapeño, black beans and corn mix, then stir through so the dressing coats the salad.
4) If you like, you can serve with toppings of your choice. I always serve mine in individual side portions with sour cream and a few Mission corn chips. My favourite topping is my guacamole which you can get the recipe for by clicking here.
