
Rice porridge is a breakfast meal I’ll occasionally have, or even snack on after dinner. The following recipe is great for one person and is pretty straight forward as to how to make it.
WHAT YOU NEED
-100ml coconut milk
-1 apple with core removed and diced into small cubes. I like to also cut a few slices to go on top
-2tbsp sugar
-1tbsp sultanas
-1/4 teaspoon cinnamon
-1/2 tsp vanilla
-1/2 cup of cooked rice. (As you will be making such a small quantity, I would recommend you follow the packet instructions of how to best cook your chosen rice).
HOW TO MAKE IT
1) Bring the cooked rice, coconut milk, cinnamon, sugar and vanilla to a medium heat. Reduce down to a medium low heat and stir until it thickens (about 5 minutes).
2) Stir in the apple cubes and sultanas for another 5 minutes until warmed through and serve.
