It’s so easy to get a flavourful steak with only a couple of ingredients. I really like cooking my steak like this because it’s minimal effort and I can go off and do other things while it cooks.
WHAT YOU NEED
-A piece of steak of your choice
-2 tablespoons of oil, I use vegetable oil
-2 tbsp minced garlic
-2 tablespoons butter
-2 sprigs of thyme
-Salt and pepper to your preference
HOW TO MAKE IT
1) Simply start by pulling out your steak and letting it sit for 25 minutes.
2) Next, preheat your oven to 100*C.
3) On your cooktop, bring your oil to a medium high temperature. Please note, you may like to use an oven safe pan for this, as further down in the recipe the steak will go into the oven. You can always transfer the steak and juices into another dish when you reach that step.
4) Once hot, cover both sides of your steak in salt and pepper and lay it into the pan.
5) Sear all sides of your steak for 45 seconds each. If you have a fatty side, render it down.
6) Now is the time to add in your butter, garlic and thyme sprigs. Once the butter has melted, baste it over the steak for about a minute on both sides.
7) It’s oven time! I like to leave my steak in the oven for 50 minutes, which for my oven will bring the internal temperature of the steak to 55*C. Of course leave it in for longer if you want it cooked more. I find it easiest using the internal temperature tell how well cooked the meat is. Please check out my How To Know When Meat Is Cooked guide to find the perfect internal temperature for your steak.
8) Once you have reached your desired internal temperature, remove the steak from the oven and allow to rest for 10 minutes. Then it’s ready to serve. I’ve served mine with a buttery carrot mash.
