
WHAT YOU NEED
-500g gluten free bread crumbs
-1 x 415g can of pink salmon, drained
– 1 2/3 cup mashed potato
-1 cup spring onions finely chopped
-1 lemon, zested and juiced
– 1 egg, beaten
-2tsp lemon pepper
-1tbsp Parsley
– Oil for frying
HOW TO MAKE THEM
1)Mix together the salmon, mashed potato, breadcrumbs, spring onion, lemon pepper, egg, parsley, lemon juice and zest.
2)Form the mixture into 8 patties.
3)Heat the oil in a pan. Turn it down to a low heat and cook the patties on both sides for 4 minutes until golden brown. It’s best to do this in batches.
