This tomato salsa is super fresh, a little zippy and very easy. I love serving it on burrito bowls or even as a chunky dip with some corn chips. If you want a smoother salsa, you can always blend all ingredients in a food processor.
WHAT YOU NEED;
-4 Roma tomatoes, diced
-1/2 red onion, finely diced
-1 jalapeño, finely chopped (seeds and top removed)
-The juice of 1 lime
-2tbsp garlic powder
-1/2 cup fresh coriander, chopped (or 1/2 cup of fresh, chopped parsley if you would prefer)
-1/2 tsp cumin
-Salt and pepper, to taste
HOW TO MAKE IT;
1) In a bowl, add the tomatoes, onion, jalapeño and coriander, (or parsley), then mix together.
2) Stir through the lime juice, garlic, cumin, salt and pepper.
